Donegal Dexter Beef Tacos

INGREDIENTS

The Beef & Sauce: 

  • 1kg steak pieces (diced or in large chunks)
  • 1 medium onion, diced
  • 125ml beef stock
  • Juice of 1 lime
  • 2 tbsp tomato paste
  • 2 cloves garlic, crushed

The Taco Spice Mix: 

  • 1 tbsp chili powder
  • 1 ½ tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • Salt & black pepper to taste

METHOD:

  1. Heat a splash of oil in a hot pan and brown the beef for a few minutes until coloured.
  2. Place the beef and diced onion into the slow cooker.
    In a small bowl, whisk together the beef stock, lime juice, tomato paste, garlic, and all the spices. Pour this mixture over the beef.
  3. Cover and cook: On low for 8 hours, or high for 3-4 hours until the beef is tender and easily pulls apart with a fork.
  4. Remove the beef from the slow cooker and shred using two forks.
    Return the shredded beef to the slow cooker and stir into the juices. Let it sit for about 15 minutes to absorb all the flavour.
  5. Pile the shredded beef into warm corn or flour tortillas and serve with your favourite toppings.

Topping ideas: Fresh coriander, diced onion, sliced avocado or guacamole, sour cream, extra squeeze of lime, pickled red onions.
